I have been using Pappacom's Sudoku puzzle generator for a while and find it to produce excellent results.
I have recently installed Simple Sudoku and like it a lot, particularly the way it helps in solving.
My question is: - Comparing 'Very Hard' from Pappacom with 'Extreme' from Simple Sudoku, which are harder?
If I 'Dub' an 'Extreme' puzzle from Simple Sudoku into Pappacom, it says the puzzle is 'unfair', maybe requiring guesswork etc.
Comments please.

Well, there is your answer.
Pappocom puzzles never require colouring, forcing chains, or tabling.
Many of the puzzles I publish on my website as the "Daily Sudoku Nightmare" would probably be rated 'unfair' too by Pappocom. However, when you can use a helper program like Sudo Cue or Simple Sudoku, these ratings themselves must be doubted. Such programs allow you to take different views on the puzzle and the remaining candidates, enabling you to look for more obscure and complicated patterns, try a little colouring, etc.
Whoever has better tools at his/her disposal wants to use these tools and look for a bigger challenge.
